Grinding the shaft's outer surface to a tight, consistent diameter is what lets it fit precisely inside a linear bearing without play - that precision is what keeps the bearing running true at speed and reduces the internal stress that would otherwise shorten its service life. Get the shaft's roundness or surface finish wrong and the bearing riding on it wears unevenly, however good the bearing itself is.
